the proper size

Cutting boards are a daily necessity in the kitchen. If you plan to
leave your cutting board in one place all of the time, purchase the
size that fits the space, or have a board custom made for the space.

Smaller cutting boards are preferable if you have to store the board.
Pulling a large, heavy cutting board in and out of a cabinet is a
task that you will soon grow tired of. Smaller cutting boards are
lighter, and therefore easier to move in and out ot storage.
3. Some people prefer to use one cutting board for meats and one for everything else, although this is not necessary because studies have shown that bacteria dies or goes dormant in wood after about three to four minutes.
